Butternut Squash, Sweet Potato & Roasted Courgette Salad

INGREDIENTS
Butternut Squash
Sweet Potatoes
Courgettes
Red Onions
Sunblushed Tomatoes
Large sweet Chili
Sweet Basil
Crushed Garlic
Olive Oil
Lime Juice
Cracked Black Pepper
Sea Salt

 

METHOD
Dice Butternut Squash and Sweet Potato, you can leave the skin on marinate with Garlic Olive Oil and Salt & Pepper, bake in oven on 200 degrees for 15 minutes until soft
1\4 the Courgettes and char-grill or if not dice and oven bake for 15 minutes on 180 degrees, wedge Red Onions season with Olive oil Garlic and Salt and pepper oven bake at 200 degrees for 15 minutes
Slice chili’s combine vegetables with sunblushed tomatoes

DRESSING

Combine Olive Oil, Salt Pepper and lime juice with some of the oil fro the sunblushed tomato and whisk together

Mixed Vegetable together with the dressing and Garnish with Chili and fresh Basil
