Tinned Calaloo (similar to Spinach)
Scotch Bonnet Chilli
Soak Salt-fish over night in cold water, the throw away water then boil salt-fish for about 10 minutes, then discard water leave to cool then flake
Cut top and bottom from the green banana and make a slice from top to bottom of the banana then place in a pot with salt and white vinegar then boil for 30 minutes, remove and place in cold water then peal off skin
Slice onions and finely chop chilli, then chop spring onion, fry in pan with vegetable oil and fry for 5 minutes, then add salt fish fry for 3 minutes the lastly add calaloo (open tin and drain first) then simmer for 5 minutes then add black pepper and garnish with spring onions
Place on plate with green Banana then ready to eat!
