Spanish Pork

INGREDIENTS
Spare Rib Chop
Choritzo
Chopped Tomatoes
Tomato Puree
Sunlushed Tomato Paste
White Wine
Smoked Paprika
Black Olives
Button Mushrooms
Large Spanish Onions
Sweet Red Peppers
Crushed Garlic
Parsley
Chicken Stock
Salt & Black Pepper
Olive Oil

METHOD
Marinate Pork with Chopped Garlic, salt & Pepper Heat pan with Olive oil till hot, then fry Pork until brown, remove from Pan.
Slice Onions, Peppers mushrooms, then add to pan with remainder garlic fry for about a minute then add wine and reduce, then add tomato paste cook for 2 minutes then add chopped tomatoes chicken stock, then add pork steak back to pan cover with lid and simmer on low heat for 45 mins

Finely chop Parsley add to pan with black olives then leave Ā uncovered and reduce for 10 minutes then it is ready to serve.
