Fillet of Beef with Wild Mushrooms Horseradish Mash & Red Wine & Thyme Jus

Fillet of Beef
Maris Piper Potatoes
Salted Butter
Double Cream
Horse Radish Cream
Wild Mushrooms or Button Mushrooms
Shallots
Garlic
Fresh Thyme
Baby Carrots
Red Wine
Beef Stock/Chicken Stock
Vegetable Oil
Chives
Whole Black Peppercorns
Salt & Pepper

METHOD
Season Fillet of Beef with Salt & Pepper put pan on with clove of Garlic and spot of Veg Oil heat then seal Fillet of steak until brown on all sides, remove from pan and set aside

Slice Shallots place in pan with Garlic thyme and black peppercorns saute, then put 1\4 bottle of red wine then reduce add Beef & Chicken Stock and reduce till thick, then pass and set aside

Peel and boil potatoes for 20 Minutes drain then add butter, cream horse Radish Cream, salt, Pepper & Chopped Chives

Slice Mushrooms and peal shallots the saute with Garlic in butter and salt and pepper

Peel boil and the char-grill Baby Carrots

Place Potato in middle of plate, slice and put Fillet of beef on the side, assemble Mushrooms and shallots around potato then pour over red wine sauce
