Buffet Style Spanish Chicken with Chorizo

INGRIEDIENTS

Chicken Breast (Skinned and Boneless)
Salt
Pepper
Garlic Puree
Olive Oil
Chorizo
Wild Rocket
Red Peppers
Red Onions
Green Pitted Olives
Mustard & Cress

METHOD
Marinate Chicken in Salt Pepper, Olive Oil and Garlic Puree
Griddle with Grill Marks until cooked
Dice and Roast Chorizo
Large Dice and Wedge Red Peppers & Red onions then Griddle
Mix with Wild Rocket and arrange on the plate
Slice chicken and place on top of salad and put chorizo over chicken
Garnish with Mustard and cress then Drizzle with Olive Oil
